When it comes to tasting an element that is sweet,  the experience can almost always be enhanced by adding salt….this is not a new concept or revelation by any means, but yet, every time I add salt to a dessert, mignardises, or caramel, people seem to respond with a newly discovered enthusiasm.  One example has to be my most beloved petit four, the one people always seem to like and peanut butter junkies go nuts for (no pun intended).  Peanut butter cocoa lollipops.  Tiny little one biters that are made with a peanut butter mousse enhanced slightly with a bit of ultratex 3 and cocoa butter.  They are then dipped in rich cocoa glaze made with Amedei cocoa powder.  After it is set, it is topped with Peruvian river salt and crushed peanuts.  Not a bad way to end an evening!
